How to Properly Prepare Fish Part 3: Cooking Methods
In part 2 of this series we discussed how to properly freeze and store fish for later use. In part 3 of How to Properly Prepare Fish, we will be using those fish that we have stored and briefly describe the various methods to cook them up.
There are several methods you can use to cook fish that are healthy and reduce the risk of consuming contaminants, particularly if you are engaged in Los Angeles fishing. Automatically some of you may be thinking that cooking a fish healthily means it will be bland. Of course, cooking fish in a healthy fashion does not mean you have to compromise the flavor of the fish. Add a little lemon zest or any spice that pleases your palate and your fish will come out tasting great.
The best ways to cook fish are by baking, broiling, steaming or grilling. These methods are the healthiest because they allow fatty juices to drip away, which is where most of the contaminants (such as DDT and PCBs) are stored. Here is a basic instruction guide for the healthiest ways to cook your fish.
Bake:
- Preheat oven to 450 degrees F.
- Spray a baking sheet/dish with nonstick cooking spray
- Season the fish as desired
- Place fish on baking sheet in a single layer, season as desired
- Bake 8 to 10 minutes per inch of thickness, uncovered
Broil:
- Preheat broiler before adding fish
- The fish should be 4 – 6 inches away from the broiler
- Watch fish carefully
- Thin fillets do not have to be turned over
- Thicker fillets should be turned over three quarters through cooking
- If pan broiling, use a nonstick skillet over Medium-High heat
- Cook fish 4 – 5 minutes on the first side (per inch of thickness) then about 2-3 minutes on the second, or until done
Roast:
- Roasting is basically baking at temperatures above 400 degrees F. Before you begin to roast the fish, you can season it with anything you like. Baking at high oven temperatures causes caramelization, which enhances the flavors of the fish.
Grill:
- Heat up grill for about 20 minutes at its highest setting
- Brush grill grate generously with oil to prevent fish from sticking; repeat a second time to prevent the fish from sticking
- The fillet should be 4 to 6 inches from heat source
- Place fillet on grill rack in a single layer and directly about the heat source
- Cook fish 4 to 6 minutes per side (per inch of thickness) over Medium to Medium-High heat or until done
Avoid frying fish at all costs. Frying fish will store the pollutants in the fish, exposing you to higher amounts of contamination. Baking, broiling, grilling, and roasting are the healthiest ways to prepare fish, lessening your exposure to DDT and PCB contaminated fish.
